Amazonian Skillet

Ingrediants

  • 2 Avacados
  • 4 Large Sweet Potatoes
  • Wheel of Queso Fresco
  • 1/3 Bunch of cilantro
  • 5 Eggs
  • Sirarcha to taste
  • Oil for saute

Directions

1. Dice all 4 sweet potatoes in order to avoid burning the smallest pieces, it’s important to cut them all the same size, smaller is better.

2. Saute sweet potatoes on high. The key is to go long, plan on 20 minutes, and don’t forget to stir! Total volume will reduce by ~35%. At that point, the sugar in the sweet potatoes can caramelize. The edges will be crispy. This step WILL MAKE OR BREAK your breakfast. about 4 minutes before the potatoes finish, proceed immediately to step four.

3. Prepare the fresh ingredients. Dice the avocado in its shell. Mince the cilantro. Crumble the cheese. All these ingredients can be set to the side. This step should be completed while waiting for step three.

4. Create five spaces in the skillet. Some metal should be showing. Turn heat to medium-low and crack each egg into it’s own space. Add 2 tablespoons of water and cover the skillet with a tight-fitting lid. Let sit for 4 minutes. Remove from heat and remove lid.

5. Arrange Fresh ingredients over the top. Serve with a bottle of sriracha on the table.
